Try this egg, potato and tomato breakfast recipe!

Ingredients:

  • 4 potatoes
  • 3 tablespoons of cornstarch
  • Sunflower oil
  • 3 eggs
  • Salt
  • 100g of mozzarella
  • 1 tomato
  • 100g of cheese
  • Parsley
  • Pepper

Instructions:

Rinse the potatoes with cold water to prevent them from turning black. Peel and grate 2 of the potatoes, then mix them with cornstarch to make a sticky mixture. Spread half of this mixture evenly in a pan and cook for 1-2 minutes.

Beat the eggs, add salt and pour half of the mixture over the cooked potato base. Top with mozzarella and sliced tomato, then cover with the remaining potato mixture. Cook for another 1-2 minutes.

Add cheese, parsley, salt, and pepper on top of the potato cake. Cover and cook for 10 minutes until the cheese melts and the cake is cooked through.
